I am thrilled to share that my small Italian restaurant has been featured on American Dream TV, a renowned show that celebrates the American Dream through real estate and lifestyle. Being chosen to showcase our restaurant on this esteemed program is an incredible honor, and I am excited to share my story. 

When Brent Green wanted to share my story with a national audience I realized I have so many stories to tell, where do I start? It’s not about my restaurant, or my parents' restaurant, my grandpa's produce truck, or even my great-grandpa's fishing boat. They asked a simple question: “What makes your restaurant special?”. In short, It’s about our family history and passing recipes down from one generation to the next. My family history is so deeply rooted in this restaurant. I’ve been given an opportunity to operate a restaurant on Main Street America because of the sacrifices my ancestors made.

To me, the American Dream is all about hard work, dedication, and the pursuit of excellence. If I had one story to tell about my American Dream, it would be how it all started generations ago. The tough choices my ancestors made for the betterment of their children and children's children and so forth. My great grandpa sailed to The United States of America for a chance at a better life. A better opportunity, education and health for his family. For the pursuit of his God given rights. 

As recipes have been passed down generation to generation I decided to share a classic recipe, anyone can make, that represents my roots and culture: Homemade Pasta from Nonna. This Italian staple is made with just two ingredients, flour and eggs. I invite you to have some fun and try it at home.

Fresh Pasta Dough from Bologna’s

  • 4 large eggs
  • 2 cups all-purpose flour
  • 1 cup semolina flour
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • Pour the flour in a mound. With your fingers make a well in the middle large enough to hold your eggs. 
  • Crack your eggs into a large measuring cup, add oil, pour into the well. Add salt to center and using a fork carefully whisk the eggs in the well, not drawing any flour.
  • Once the eggs are all mixed, slowly start to draw the flour (with the fork) into the center of the whipped egg-oil mixture. Continue until it starts to resemble dough.
  • Using your fingers, start to press and fold the egg-flour combo into a ball. If sticky, slowly sprinkle more flour and continue to massage the mixture.
  • Knead the dough: push down and away from you repeatedly until the dough feels smooth. Maybe for 10-12 minutes.
  • cover dough with plastic wrap and let it rest for 30 minutes.
  • cut pieces from dough balls, use a rolling pin to flatten and form a pasta sheet. Cut into any shape desired. [Or use a KitchenAid with the Gourmet Pasta Press, Model KSMPEXTA or the 5-Piece Pasta Deluxe Set, Model: KSMPDX].
